Ray Peat says starches are fattening and also that gut bacteria is bad because it feeds serotonin and estrogen which lower metabolism; so RS isn't good for you though it sounds interesting. |

No, I'm not, but the initial scientific studies on resistant starch appear promising for improving blood sugar and for improving gut bacteria:
"Dietary treatment with rice containing resistant starch improves markers of endothelial function with reduction of postprandial blood glucose and oxidative stress in patients with prediabetes or newly diagnosed type 2 diabetes"

By the way, resistant starch is a type of fiber that the human body can't digest--hence why it's called "resistant"--but that the beneficial bacteria in your gut feed on. |
