I have been tyring to eat healthy all summer. I have had little dairy, meat, very small amount of white bread, little sugar and no soy! I am just a little tired of steamed cabbage and spinach. I do enjoy a green smoothie or two everyday. I would like to know what healthy lunch or dinner recipes you all enjoy weekly. I am not trying to lose weigh. I am just trying to eat better. |

I strongly recommend looking into the Mediterranean Diet. I am of Mediterranean descent myself.. and I can say that the women of my background have beautiful skin, are a healthy weight, and just generally healthy. The Mediterranean Diet is one of the healthiest ways of eating in the world.
- Lots of fish (especially salmon)
- Olive Oil (Olive oil also tricks your stomach into feeling full because it coats the stomach)
- Lots of fruits & vegetables
- Whole grains (Omega 3's)
- occasional red wine
Blueberries are a great source of antioxidants, sun flower seeds, walnuts are good for snacks (dark chocolate is okay too - has lots of antioxidants). Hope this helps |

I suggest taking lots of fish oil, organic blackstrap molasses, Organic apple cider vinegar, Vitamin C (4000mg) per day. Watch your skin start to GLOW from within |

Cod liver oil is rich in Vitamin A, which can be toxic if taken in large quantities.
So, yes, take fish oil every day as it is very good for your health, but if it is cod liver oil, then take it in moderation. |

Tasha, How much fish oil should I start out with? I take a womans multi and a hair vitamin everyday, and would like to add fish oil as well. Any fav brand that you like? Thanks |

Totter, there's controversy about spinach in that the oxalic acid prsent can bind with the calcium present and make it unavailable to the body ..so its ok sometimes... but not as one of your basic fundamental veggies...much better to have other dark green leafies...like kale, collards, broccoli..on a regular basis(all more nutrient dense than cabbage)..great with garlic, grated ginger and some cold pressed oil (chia oil, for example, is the richest veggie oil in omega 3's..and tastes a lot lighter than flax or hemp oil)

Kale is gorgeous! It has great texture and a nutty taste. One of my favourite greens!
I'm not a big eater so I have been able to stick to certain foods quite well. My diet, for skin and health, is mainly comprised of avocados, salmon (both fresh and canned), green salads (rocket), vegetables, olives, chicken, porridge, eggs and nuts. I only drink green tea, water, and red wine.
I do my best not to eat any sugary foods or drinks. Basically, I stick to a low GI diet! |

Totter, have you checked out eating well magazine? It has lots of healthy recipes and a section on quick, healthy meals. I like that magazine a lot for ideas. |

I take a high amount more than average like 6-9mg fish oil and 4-8mg Vitamin C daily
molasses is packed vitamins and minerals and so is apple cider vinear |

I like spinach..no plan to quite eating that
But I know if you happen to take calcium tablets with a meal or with certain medications the calcium will absorb whatever is in what you take and make it work less well/less effective.
like you should not take vitamins then calcium like rolaids,tums,calcium tablets because it makes everything work less well.
take calcium tablets later on without other things.
I've had a few doctors tell me this many times. |

Oh, I definitely second this. Eating Well is one of my all time favorite cooking magazines. Very healthful, yet tasty stuff. Recipes aren't overly complicated and use normal things you can find at the store. They do have a web site if you want to check it out: http://www.eatingwell.com/ |

I support you on eating a healthy diet. I feel it is always easier (for me) to eat a healthier diet in the summer.
My doctor suggested to increase omega in my diet and I found that improved my skin. |

Totter, one lunch I prepare that is quick and easy is tinned salmon (I like John West's), on a bed of rocket salad (or any green), with black olives, avocados and pine nuts. This is my 'on-the-go' lunch that I pack in a tupperware dish.
With kale, I just steam it, witht the rest of the veg.
Does anyone else drink Matcha Tea? Apparently, the ORAC rating of matcha is 1300 units/g, compared to 105 units/g for pomegranates and 91 units/g for wild blueberries. |

I second the post above that mentioned spinach!
Almost everyday I will eat a basic spinach salad:
-Baby spinach leaves
-Rocket leaves
-Grated carrot
-Cashew nuts
-Japanese sesame dressing
I never loved the taste of spinach, but I can't go without it now! |

Totter, kale can be steamed (or sauteed/stirfried)or added to soups..it can be eaten warm... or cooled and added to salads...and it's highly nutritiousin green smoothies. |

Instead of cereal in the morning I eat rolled organic oats (bulk buy from whole foods, it's pretty cheap) with lots of flax seeds and fresh fruit.
I found it to be really important to have easy alternatives to, say, a fast food meal, on these days where you cant't be bothered to cook. Avocado sandwiches are easy and delicious and have lots of good fat.
I also make my own basil garlic pesto every sunday. I put it in a big tupperware box and eat it on sandwiches with sundried tomatoes and spinach or with pasta.
I think it's a good idea to invest in good bread. Because, at the end of the day, I find myself eating it more than I would like.
Oh, self made energy balls are a great alternative to chocolate bars. |

Quite a few take out food stores in my city they have these signs that say "eat for $1".
and at these arabic owned places it is usually cheese pies or spinach pies.
-kind of like a turnover made of bread..but kind of open on the top and usually with spinach and onions and herbs.
those are pretty tasty usually! |

i eat rice with all kinds of fresh vegetables, and 3times fish a week. I like apple very much.
i am now loosing weight, i have to eat the fresh food without the rice, sugar, everyday i drink much green tea. |

I just spotted the name of this thread and it caught my eye. (My apologies, but I haven't read through it yet )
I just received/started reading a book that I believe might be of interest to some, (especially based on the thread title!)...(Truth be told, those who immediately popped into my mind (that would definitely be interested in this book are); 'Bethany', 'Rileygirl', 'Skippie' + 'Jasminerosey'...
Anyhoo, please have a look at the book "Your Skin Younger", by "Alan C. Logan, ND, Mark G Rubin, MD and Phillip M. Levy, MD.
From the 15 or so pages I glanced over, I do believe this book will be worthy of it's own thread on EDS, and should be a staple in any skin care aficionado's home!
After all, we are what we eat (and put on our skin)!

I try to eat as healthy as I can. But I do have cravings for junk food. Is it okay in eat junk food once in a while? Just recently, I've been eating donuts, ice cream and chocolate. |

Chocolate is okay (within reason) if it's dark chocolate. It's actually good for your skin.
I think to all junk food there is a healthy alternative. Ice cream, fries etc. IT's just the hassle that's the problem. |
