I made this recipe (see below) last week. It is absolutely delicious and has lots of vegetables.

I, however, made these major modifications to it:
1. I used 16oz of penne instead of bowtie pasta
2. I added nutmeg and a little oil to the sauce to make it into more of a bechamel sauce
3. I used honey mustard instead of Dijon mustard.
4. The only vegetables that I used were zucchini, squash, garlic, onions, carrots, broccoli, and mushrooms. Next time, I will use more onions and broccoli, and I will include cauliflowers. These vegetables were very soft since they were either sauteed or cooked in pasta water.
5. I added Italian sausage to it. I cut the sausage into little pieces and cooked them with the garlic and half the onions.
6. Next time I make it, I will whole wheat pasta to make it healthier.
7. I used 2% milk instead of skim milk. Though, you can whichever milk you prefer.
8. I increased the sauce by roughly 20% by using more milk and flour.
This recipe turned out to be absolutely delicious. I hope that you get the chance to make it as well. |
