I think dieters often fall into a trap of thinking they need to follow some magic set of rules in order to succeed, but the first time they break a rule (which seems inevitable) they fall off the wagon, and fall off hard - and go back to their bad habits and then some. The biggest problems we in the west seem to make (besides lack of exercise) are: portion size and processed food. If your dinner consists of protein, starchy carbs (pasta etc) and veg carbs, a good reminder is that each portion should not exceed the size of your fist. And eating food that is not overly processed means you're not going to be eating hidden salt, sugar and fat.
I've adhered to this simple philosophy and it works for me - I do find that being at the right weight is an important factor in not looking my age (if I go a few pounds underweight, I immediately look gaunt and older).
