Tonite I made pizza that went over quite well in my house and it is a super easy...

2 thin crust Boboli pizza crusts (you can use regular, but we like thin)
2 containers of Pastene Pesto sauce (or one large family size)
2 containers of Bruschetta (you really don't need both containers, but I find just one doesn't quite cut it, so I really use one and a half containers)
Mozarella cheese
little olive oil
oregano

heat oven to 450 -

lightly brush pizza pans w/olive oil

On crusts spread the pesto, then top with mozarella, then your drained bruschetta. (The recipe calls for the cheese to go second for some reason) Drizzle a wee bit of olive oil, then a little oregano.

Pop in the oven for 10-15 minutes.

YUM YUM YUM!!!!! Really yummy pizza. You can even use the smaller pizza shells and make them as appetizers. Truly delish and super easy.

Anyone else want to share their fav. quick recipes?

OMG now I am starving for pizza, who knew it was so easy to make!! My 15 minute fix is normally a drive thru Cool .

My fav quickie recipie is quesedilla (don't think i spelled it right)

Anyways the grocery store by my house sells this amazing chunky salsa that is full of beans, corn and all sorts of stuff. I get a whole wheat tortilla, put it in the fry pan (on medium) with a tiny bit of extra virgin olive oil. I spread half the tortilla with this salsa and top with some grated cheese (mozza, cheddar, jack, whatever you want). Fold the other half of the tortilla over and heat until everything is melted.

Top with more salsa, sour cream, avocado..whatever you like.

I swear, it takes like 5 minutes (I only make single servings.)

Pepper Steak (lol, though feeding my crew it's steak in soy sauce gravy)

2 lbs of cubed beef (I usually buy a nice roast and cut that up)
2 Tbs - minced garlic
1 med white onion, thinly sliced
1 - 2 tsp ground ginger
1/4 - 1/2 cup soy sauce

Saute the beef with everything but the soy sauce. When browned I add the soy sauce and 1/2 - 3/4 cup of water. Simmer for 10 mins or so. (I make the Minute Rice then) Once it's all bubbly, I have ready a 1/2 cup of water with 2-3 tbs of corn starch, add to beef, just enough to thicken and that's it.

Family teases me this is ALWAYS mom just came back from doing groceries dinner. It's quick, easy, filling & yummy. One of these days they'll let me put peppers & tomatoes back into it!

I like buying a cheap packet of ramen soup and throwing in some veggies - it makes a nice, healthy and inexpensive meal.

Speaking of pizza, anyone remember the mini-pizzas made with english muffins?

My hubby and I improved on it and LOVE it!

prepackaged refrigerated crumpets
tomato sauce of choice, add in lots of italian seasoning and black pepper to make pizza sauce
organic mozzarella cheese
sliced black olives
organic pepperoni slices

toast the crumpets in your regular toaster,place on cookie sheet spread with pizza sauce mixture, top with pepperoni, grated cheese, olives

BROIL until cheese melts and gets a little browned - just takes a few minutes!

I swear you have not had good ones until you have tried the crumpet method. Kids can make their own, and it is great for college students. happy snacking!

This isn't a meal, but Maria's pesto theme made me think of a super dipping sauce for crusty bread. I especially like it with Panera's asiago cheese bread. YUM!

1 small can of tomato sauce.
1 small container or jar of pesto.
1 wedge of brie (remove rind).

Mix in bowl and microwave, covered, until the cheese melts and the ingredients combine thoroughly. Consistency should be somewhere between heavy cream and cake batter.

I have also used more tomato sauce in the recipe to create a thinner consistency which is YUMMY tossed with spaghetti!

Okay - now I'm completely starving.

Ok, one sweet one- by the way love this topic, am very much a food fan.

1 cup dried fruit (I like apricot, and sultana, but can use anything)
1 cup nuts (walnuts, almonds, pine nuts, pecan nuts- anything at all)
1 cup dessicated coconut
1 cup chocolate chips
1 tin condensed milk (prefer skim condensed milk- makes me feel better, which is strange as all the sugar is not going to be very healthy)

Mix all together in bowl, spread into lined slice tin and bake at about 180C for twenty (?) minutes- keep an eye on it- or until lightly browned. Slice up when cool- best and easiest slice ever!

One of my pups is having surgery today... so this sounds like a nice treat for mommy to make while she de-stresses over the weekend!! Sounds DELICIOUS.
