It's super simple and easy to prepare:
-Slice one avocado and two tomatoes, throw them all into a bowl, squeeze a few drops of hot pepper sauce ( or any of your favorite hot sauce),add a few drops of olive oil, mix them all up and ...enjoy!
Avocadoes, tomatoes and olive oil are super good food for your skin.And the hot pepper sauce will plump up your lips. |

That sounds delicious.
Here is my favourite summer salad:
Watercress, Lambs Lettice, Strawberries, Black Pepper, Extra Virgin Olive Oil.
So simple but makes a lovely starter course. |

Yes! I love it! That sounds so good and simple. Last night I ate some "Classic Chili" from the Winsor Pilates menu plan and noticed how plump my lips looked after I ate it! Definitely true about the hot sauce! Here is my newest favorite summer salad that I've been making almost every other day it seems:
Cucumber Salad with Dill
2 cucumbers
3 tablespoons vinegar (I use white vinegar)
1 tablespoon sugar (I use 1.5 packets of Stevia)
Salt and Pepper to taste
1 red onion, sliced and made into rings
1 teaspoon dried dill weed
Wash the cucumbers and partially remove peel in lengthwise strips. Slice crosswise. Combine vinegar, sugar, salt, and pepper in a bowl until sugar is dissolved. Add cucumber, onion, and dill. Toss Well.
I love this salad because its so quick and so low in calories.[/b] |

My friend made this at a BBQ last year. She was kind of vague on the recipe but I found it in a magazine.
Colourful Two Bean Salad with Tomatoes and Parsley
1 14oz (398 ml) can chickpeas or navy beans, rinsed and drained
1 14oz (398 ml) can red kidney beans or pinto beans, rinsed and drained
1 cup (250 ml) cherry tomatoes, cut into quarters
1 cup (250 ml) cucumbers, thinly sliced and cut into quarters
1/2 cup (125 ml) red onion, thinly sliced
1 cup (250 ml) parsley, chopped
1/3 cup (75 ml) apple cider vinegar
2 Tbsp (30 ml) extra-virgin olive oil
1/2 tsp (2 ml) natural brown sugar
1/2 tsp (2 ml) sea salt
1/4 tsp (1 ml) freshly ground black pepper
In large salad bowl, mix together beans, tomatoes, cucumber, red onion, and parsley. In a separate bowl, whisk together vinegar, olive oil, sugar, salt and pepper. Pour this dressing over bean salad and stir gently. Refrigerate before serving. |

I've become a total salad addict lately
My latest Potatoe Salad
Serves 3-4, depending on hunger
10 - 15 Boiled new potatoes, cold or lukewarm
2 strongish fresh red chillies, quite finely chopped
½ a pineapple or 2 apples
a bunch of parsley, chopped
an onion, chopped or sliced finely
dressing:
EVOO 70% + balsamic vinegar 30% + a small spoon full og honey + salt. Mix properly with small whisk. It's a slightly thick dressing coz of the honey.

Crunchy Carrot sallad
5-7 carrots sliced in quarter bits (so they are in smallish chunks)
an onion, chopped any way you please
two peppers, any colour you feel like - yellow looks nice with orange
a couple of handfulls of dry roasted pumkin and sunflower seeds (dry roast yourself in fryingpan, takes maximum 5min!!!)
5-10 cherry tomatoes
dressing
a handfull or two of fresh basil + EVOO + salt. Blend with blender.
You can add peas, or string beans or small boquets of broccoli...anything you've got on hand. I've realized this season that you can mix more or less any vegetables together and it just tastes devine! The more the merrier And don't get me started on chickpeas, kidney beans and so on....YUMMY! |

Wow, everyone's sounds soo tasty (too bad I just ate dinner!).
I've been making a salad with ...
- Lettuce
- Tomatoes
- Cucumbers
- Avocadoes
- Shredded Gouda cheese
- Zesty Italian dressing
It's soo yummy and quite filling. |

This salad can be served like a good meal on a beautiful summer day after work when you don't have time to cook. There is more fun thing to do than being jailed in the hot kitchen. Bring it with you to the beach, eat it while watching the sunset with your love. Hope you like it as much as I do
- Green grapes
- "Cut into small pieces" broccoli
- Sunflower seeds
- Lean bacon bits ( skip it if you're vegetarian)
- Miracle Light Salad Dressing

I've been making this a lot lately as a side dish.
- cauliflower, parboiled (I just micro it in a bowl with a little water)
- green onion/scallion, chopped
Combine:
- golden raisins
- capers
- fennel seed, toasted
- extra virgin olive oil
- balsamic vinegar
- red wine vinegar
- salt and pepper
- sugar
Pour over cauliflower and green onion, toss, let marinate at least 30 min. I just eyeball everything so it's to taste - I use more balsamic than red wine vinegar, just a little sugar to round it out and take away the acidic bite, and lots of raisins. They go really well with the balsamic vinegar. |
